My ultimate favorite comfort food I used to eat this all the time. You can use an air fryer to make the chicken nice and crunchy without any excess oil. A super balance of sweet and tangy fried chicken that pairs well with Jasmine rice.

Serves 3-4
Ingredients:
- 4 chicken breasts (diced)
- 2 tbsp corn starch
- 1 egg
- 1 cup all purpose flour
- 2 red pepper (chopped)
- 1 onion (chopped)
- 1/2 cup tomato ketchup
- 1/2 cup vinegar
- 1 tbsp sugar
- 1 tsp soy sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1 pinch white pepper
- water
- 3 cups cooked rice
- cooking oil
Method:
- Combine flour, 2 tablespoons oil, 2 tablespoons cornstarch, salt,onion powder, garlic powder. white pepper, and egg. Add 1 cup water gradually to make a thick batter. Stir to blend thoroughly. Add chicken pieces, and stir until chicken is well coated.Dice chicken into 1-2 inches pieces.
- In a saucepan lightly brown the onions and heat up the red peppers.
- In the same sauce pan, combine 1 cup of water, sugar, vinegar, soy sauce and ketchup. Heat to boiling. Turn off heat. Combine 2 tbsp cornstarch and 1/8 cup water; slowly stir into saucepan. Continue stirring until mixture thickens.
- In an air fryer or skillet fry the chicken until golden and cooked through.
- Once you are ready to serve layer the fried chicken on a plate and pour over the sweet and sour sauce. Add cooked rice and enjoy.
