

The main star of this meal is the Dashi miso paste. It is made of seaweed, smoked dried fish, and fermented soybeans. This savory flavor profile is the epitome of umami. This is one of my go to dishes when I can’t really think of what to make and it never fails to deliver on flavor. It is quick to make and simply scrumptious.
Ingredients:
- 1lb ground chicken
- 2 cups rice
- 3 tbsp. Dashi miso paste
- 2 tbsp mirin
- ½ onion
- 3 sweet mini peppers (diced)
- 3 sweet mini peppers (diced)
- 1 zucchini (diced)
Method:
- Wash and cook rice
- Coat a large non-stick pan with vegetable oil and brown off the onions.
- Then add the ground chicken, Dashi miso and mirin.
- Cook until chicken is almost done stir in the diced zucchini and sweet peppers.
- Serve in your favorite bowl.
